Description
Old Method that uses only one fermentation and not two, as in the Classic Method. The grapes used to make it must have a sugar content similar to that of a white wine and not a sparkling wine, because there is NO added sugar in the production process. All the sugar used in the process is of natural origin, that is, it was entirely produced by the vine. Initially, the must ferments in a stainless steel tank, with the final part of the fermentation taking place inside the bottle, in order to create the gas with a pressure equivalent to that of the Classic Method. The final wine presents the fermentation aromas that were trapped.
